Almond Paste - Cake Decorating With Almond Marzipan





Here are the step by step instructions on how to cover a cake with almond paste, also known as almond marzipan:



  • Measure the diameter and height of your cake. Brush the cake with a little apricot glaze or royal icing(if you are decorating a dummy, brush it with royal icing instead).
  • Place the almond marzipan between 2 plastic sheets. Roll to the desired thickness, about 1/8 inches. Make sure the diameter of the rolled paste equals the diameter of your cake plus 2 times of the height of your cake.
  • Peel off the plastic sheet on one side. Carefully place the paste on the cake (brush a little jam or glaze on the cake before placing the paste on it). Smoothen gently with hands. Peel of the top layer plastic sheet.
  • Finish off by smoothening any cracks in the marzipan with a spatula.
