Here is an easy funfetti cupcakes decorating idea using just sprinkles and buttercream.
These are sprinkles cupcakes, with sprinkles not only on the outside, but also inside. See what I mean:
I have added colorful sprinkles to the cupcake batter and once baked, the cupcakes turned out with such a lovely mix of rainbow colors!
You can use any of your existing cupcake recipe for this project, so long as the batter is not runny. If your batter is runny, your sprinkles will settle at the bottom of the cupcakes when baking and you will not achieve a evenly distributed specks of color in your cupcakes. And off course, for the sprinkles to be visible after baking, its best to use light colored batter. I don't think chocolate batter will work, if you know what I mean. And most importantly, after adding the sprinkles to your cake batter, do not over mix; you don't want to break the sprinkles or else you will not be able to see the distinct spots of colors in your cupcakes.
This is an easy decorating project, there is no need for any special decorating skills. And it is super fast to do too! Here is how I did it, step by step ( I also have a short video on how I make the cupcakes and decorated them at the bottom of this page):
My cupcakes turned out slightly domed after baking and for this project, I wanted flat tops so I trimmed off the excess on top of each cupcake.
Next, using vanilla buttercream, I covered the top of each cupcake with a layer of buttercream, not too thick and not to thin – enough to cover the cupcakes so that you don't get to see any of the cake underneath.
Next, as a guide, I used a large piping tip and placed it in the center of the cupcake. It really does not matter what shape the tip is, we only want to use the larger circle end of it. So if you plan to decorate larger cupcakes you might want to use something else other than a piping tip (a round cookie cutter, perhaps) in proportion to the size of your cupcakes.
Sprinkle a generous amount of sprinkles around the sides of the cupcakes and press them lightly with a finger to attach them to the buttercream.
Tip: place your cupcake on a plate or tray when sprinkling so that you can reuse the excess that has fallen down.
Gently remove the piping tip from the top of your cupcake. You will see that the sprinkles have formed a pretty circle border on the top of the cupcake.
Next is to pipe buttercream frilly swirl in the center. For this purpose, I used Wilton tip 2D. Fit it into a piping bag and pipe the frilly swirl as high as you want it. But make sure the bottom is wide enough that it covers the base buttercream that is left uncovered with sprinkles.
And that’s it. Your sprinkles cupcakes are ready.
