Marzipan – Free Easy Almond Paste Recipe For Cake Decorating



Marzipan, just like fondant, is a very versatile icing. It is mostly used to cover fruit cakes and is often used as a base cake covering before covering with fondant or royal icing. Not only can it be used to cover a cake, marzipan can also be used for modeling on cakes, from flowers to fruits and animals. With the right consistency and color, this icing, which is also known as almond paste, can be used to decorate a cake in any way you want.



Recipe


Ingredients :

240g ground almonds
60g castor sugar
120g icing sugar
1/2 tbsp brandy
1 egg
1 tsp vanilla essence
1/8 tsp rose essence




Method:

Mix ground almonds, icing sugar and castor sugar in a large bowl.

Add vanilla essence, brandy and rose essence. Mix well. Finally add the beaten egg, a little at a time, until the almond mixture comes to a kneading consistency. It is not necessary to use up all the egg.

Knead well and roll out between plastic sheets to cover a cake.



Cake Decorating Frosting – Covering Cakes with Almond Paste

Here are the step by step instructions to cover a cake with this almond paste:

  • Measure the diameter and height of your cake. Brush the cake with a little apricot glaze or royal icing.
  • Place the icing between 2 plastic sheets. Roll to the desired thickness, about 1/8 inches. Make sure the diameter of the rolled paste equals the diameter of your cake plus 2 times of the height of your cake.
  • Peel off the plastic sheet on one side. Carefully place the paste on the cake (brush a little jam or glaze on the cake before placing the paste on it). Smoothen gently with hands. Peel of the top layer plastic sheet.
  • Finish off by smoothening any cracks in the icing with a spatula.
  • Since the cake will be finished off with a layer or fondant or royal icing, a few creases here and there on your almond paste-covered cake need not be worried about too much.
