So, I'm making my sister's wedding cake (my first wedding cake!) It's going to be a simple 3 tier, stacked white cake covered with white sanding sugar.
What I want to know is, will it work, and how will the cake look, if I ixnay the fondant, cover it in white chocolate ganache and cover the ganache with the sanding sugar. Will the sugar stick to the ganache? Can I still achieve the nice smooth look?
And btw, the wedding is at a friend's home in South Florida (if climate makes a difference)
